Between returning from Phoenix, AZ, from one amazing concert, getting sick with some kind of crud, and planting a garden, I’ve been one busy woman. The garden has been finally finished, however, and that I am proud of. Perhaps on my next few days off, a little relaxing can take place, and my husband and I can enjoy a few unhurried meals together – along with nursing some allergy flare ups that occurred while being outside the past two days working on the garden…oh, the irony.
Summers are hectic. School kids are out and at home, vacations are planned, and the to-do list seems never ending. And, keeping with the theme of side dishes, I have one of the perfect ones that utilizes all the best of what’s in season during the summer, and is incredibly quick for your busy nights at home!
Hopefully, I will be making many of these with the fruit of my labor!
Summer Caprese Salad
1 8 oz ball fresh mozzarella cheese
2 large slicing tomatoes
1 bunch fresh basil
Salt and fresh ground pepper
Extra virgin olive oil
Slice tomatoes approximately 1/4 to 1/2 inch thick and slice mozzarella thinly. Layer on a plate, alternating with slices of mozzarella and tomato. Finely slice basil, sprinkle over the top. Season with Salt and pepper to taste, and lightly drizzle salad with olive oil and balsalmic vinegar.
IF there are any leftovers, you can chop this up and toss with some fresh hot pasta for a next-day pasta salad!
