I love Valentines Day. It’s up there with Christmas for me. I love all the cheesy-ness and any reason to obsess over my favorite person, my husband. Each year, we usually dine out at our favorite restaurant, and then stumble home, bellies full, and spend the evening together.

However, I do love the idea of cooking a nice romantic meal for your significant other!

Roasted Shrimp Cocktail

2 lbs (12 to 15 count) raw shrimp, peeled and deviened
1 tbsp olive oil
1/2 tsp kosher salt
1/2 tsp fresh ground pepper
1/2 cup chili sauce
1/2 cup ketchup
3 tbsp prepared horseradish
2 tsp fresh squeezed lemon juice
1/2 tsp worcestershire sauce
a few dashes of Tabasco

1. Preheat your oven to 400.

2. Mix shrimp, olive oil, salt, and pepper in a bowl. Spread shrimp onto a lined baking sheet into a single layer. Bake for 8 to 10 minutes.

3. While shrimp are baking, mix remaining ingredients in a bowl.

4. Remove shrimp, serve warm alongside cocktail sauce.
