The Wedge, Lightened Up

One of my husband and I’s favorite things about a steakhouse restaurant is a wedge salad.

Crisp iceberg lettuce, chilled until ice cold, drizzled with a tangy blue cheese dressing, topped with mild, creamy crumbled blue cheese, crisp bacon, juicy, ripe cherry tomatoes, and sliced green onion and cracked black pepper for that finishing kick.

It truly is a brilliant salad, even for those non blue cheese lovers. Perfect alongside anything grilled this spring, or eaten alone in front of the tv, as shown here. It’s sure to keep you coming back this season (and next).

The Wedge Salad
Recipe developed by Ganache

1 wedge of iceberg lettuce, (around 1/4 of a small head per person) leaves kept together
Halved cherry tomatoes
Bacon crumbles
Sliced green onions
Gorgonzola blue cheese crumbles
Cracked black pepper
Blue cheese dressing – recipe below

Assemble salad by drizzling wedge with dressing (desired amounts) and topping with toppings (again, your desired amount)

Blue Cheese Dressing
Recipe developed by Ganache

1/2 cup light sour cream
1/2 cup light mayo
1/4 cup fat free half and half
Juice and zest of half a lemon
1 tsp salt
1/2 tsp black pepper
1/2 container of gorgonzola blue cheese crumbles (around 4 ounces)

Place all ingredients in a food processor and blend. Taste, adjust salt and pepper as necessary.
